Here is how you achieve it.

Ingredients of Shahi tukda (healthy version)

  1. You need 2 of white bread slices cut into triangles.
  2. It's 250 ml of toned milk.
  3. You need 4-5 tbsp of jaggery powder adjust as required.
  4. It's 5 tbsp of melted desi ghee.
  5. Prepare 1 pinch of salt.
  6. You need 50 g of Paneer.
  7. Prepare 2 of cardamoms.

She heard me & my dad talking about Shahi Tukda a night earlier, and voila next morning's breakfast is sorted for her :P Okay, let me share how she made, She had used an cookie cutter to cut the bread pieces and then toasted them. Then she made some thin rabri(usual method), and served. Shahi Tukda is a traditional sweet where Bread is fried in Ghee and Rabdi is made by boiling milk for many hours and thickened by mawa. But here I am neither going to deep fry Bread nor going to boil milk for hours nor I am going to add mawa.

Shahi tukda (healthy version) step by step

  1. Start now... take a pan, heat it at slow flame. Now take the triangular breads and upon that on both sides nicely put ghee..
  2. Toast these breads till they are crisp and golden brown in colour. Keep aside..
  3. Preferably use ghee to toast the breads and not oil, as ghee has benefits for our body and also gives that authentic flavour..
  4. While toasting the breads meanwhile set a thick bottom pan. Put milk to boil in slow flame. Gradually the milk reduces. Add crushed cardamoms and continue boiling..
  5. We are next going to make instant rabdi..
  6. For this, when we get evaporated milk, switch off the flame. Add jaggery powder, salt and mix. When jaggery is dissolved, add grated market brought paneer. Mix all well. Then add vanilla essence/ rose water and mix again..
  7. If you are using homemade paneer/ chena, then wash it very nicely to remove it's acid and then add, else your rabdi will curdle..
  8. Now switch the flame on just for two minutes. Then again switch off and let our instant rabdi cool down..
  9. Then comes time to plate. Arrange the bread triangles on the serving plate. Pour your instant rabdi on them generously. Garnish with almonds or any dry fruits of your choice..
  10. Healthier version of shahi tukda is ready.. keep it in the fridge at least for 30 minutes. The bread absorbs the rabdi and becomes soft and flavousome..
